Creamy Chicken with Penne Rigate Pasta:
Ingredients:
- 200 grams of Chicken Breast chopped into small pieces
- 1 tsp Olive Oil
- 1/4 cup of Brandy
- 50 ml of Cream (I used Grand Fermage from Ramco)
- 1/2 Cup of Chopped Onions
- 1 tbsp Garlic
- 1/2 tsp of Italian Seasoning
- 1 tsp Black Pepper
- 25 grams of Penne Rigate Pasta
- 25 grams of Fresh Parmesan Cheese
Instructions:
- A day before, marinate the chicken breast in water with salt, black pepper and 1 tsp garlic.
- In the meantime, boil 25 grams of Penne Rigate Paste in hot water with 1/2 tsp olive oil and salt.
- Add 1 tsp olive oil in a pan. When it is hot, add the 1/2 cup of chopped onions.
- After a few minutes, add 1 tbsp garlic and sautee for another 3 minutes.
- Add 1/4 cup of brandy and cook until when alcohol smells disappears.
- Add 50 ml of heavy cream. Sautee for few minutes, add 1/2 tsp Italian seasoning and 1 tsp black pepper.
- Add the chicken pieces, add 1/2 of water and cover. Let it cook for about 5 minutes or until chicken is done.
- Drain the cooked pasta and add to the chicken.
- Top with 25 grams of fresh parmesan cheese.
- Enjoy!
