Chicken Fajitas, Flour Tortillas and Black Beans Recipe

This is one of my favorite meals to make since a 200 grams of chicken breast yields over 60 grams of protein. However, I love to pair my chicken fajitas with Mission Foods Carb Balance Flour Tortillas which has 19 grams of carbs of which 17 grams are dietary fiber. An eight pack sells for around $5.00 at Vons or Smart and Final. Also as part of the cholesterol reduction strategy, around 150 grams of black beans will be added to the meal.

Instructions:

  1. A day before, marinate the chicken breast in water, salt and pepper.
  2. Heat 1 tbsp of olive oil in the pan and sautee the onion and bell pepper for a couple of minutes.
  3. Remove the onion and bell pepper mixture and set aside.
  4. Add 1 tbsp of olive oil to the pan and add the chicken strips. Saute for a few minutes.
  5. Add 1/4 packet of chicken fajitas mix, mix well and add the chopped tomatoes.
  6. Add about 2 tbsp of water and stir until water has dried and chicken is cooked.
  7. Add the onion and bell peppers and let it cook for about 1 to 2 minutes.
  8. Heat up the tortillas and add 1/2 to each tortilla.
  9. Serve with black beans and salsa.
