Instructions:

  1. A day before, mix all of the marinate ingredients and blend in a blender.
  2. Put the chicken in a zip-lock bag and pour in the marinate. Let it marinate for 24 hours.
  3. The next day, remove the chicken from the refrigerator. Split the chicken in the middle and put in an oven at 350 degrees or over a charcoal grill with the breast-side up. If using a grill, put oiled alumunium foil under the wings to avoid overcooking.
  4. Mix the dry rub and sprinkle on the chicken.
  5. If using the grill method, you can turn the chicken over to sear it for a couple of minutes.
