El Pollo Loco Chicken Clone Recipe:
Ingredients for the marinate:
- Whole Chicken
- 1/2 cup Orange Juice (fresh)
- 1/2 cup Pineapple Juice (can but no sugar)
- 1/4 cup Lime Juice
- 6 Garlic Cloves
- 1 tsp whole Peppercorns
- 2 tsp ground Ancho Chili
- 1 tsp smoked Paprika
- 2 and 1/2 tsp ground Onion
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Mexican Oregano
- 1/2 tsp Turmeric
- 1/4 cup Olive Oil
- 2 tsp Kosher Salt/
- 1 tsp Black Pepper
Ingredients for the dry rub:
- 1/2 tsp smoked Paprika
- 1/2 tsp ground Onion
- 1 tsp ground Garlic
- 1 tsp Kosher Salt/
Instructions:
- A day before, mix all of the marinate ingredients and blend in a blender.
- Put the chicken in a zip-lock bag and pour in the marinate. Let it marinate for 24 hours.
- The next day, remove the chicken from the refrigerator. Split the chicken in the middle and put in an oven at 350 degrees or over a charcoal grill with the breast-side up. If using a grill, put oiled alumunium foil under the wings to avoid overcooking.
- Mix the dry rub and sprinkle on the chicken.
- If using the grill method, you can turn the chicken over to sear it for a couple of minutes.
